Zucchini-Honey Bread
3 cups Flour 1 tsp. Salt 1 tsp. each Baking Soda & Baking Powder 1 tbsp. Cinnamon 1 cup Chopped Pecans 2 cups Zucchini, grated 2 Eggs, beaten 3/4 cup Honey 1 cup Vegetable Oil 2 tsp. Vanilla Extract 1-1/2 cups Sugar |
Preheat oven to 325 degrees. Combine first 5 ingredients, stir in pecans. Combine zucchini with remaining ingredients and add to flour mix. Stir until dry ingredients are moistened. Spoon batter into 2 greased and floured loaf pans. Bake for 1 hour or until a toothpick inserted in center comes out clean. Cool in pans 10 min. Remove from pans and let cool on wire racks. Yields 2 loaves. |
